I'd suggest to start out with Debian stable 'lenny' 5.0. If you later find out that the software released about 1 year ago is not as up-to-date as you desire, you could still upgrade to less stable testing (which requires more effort to maintain). On the other hand, Debian does not support a downgrade from more up-to-date 'testing' to stable 'stable'.
