Thanks a lot for the suggestions! I had a look at ivman again and found halevt [2] which is based on ivman and seems to be the perfect tool for what I am after. Unfortunately it does not support mounting of encrypted volumes out of the box, which did not really surprise me a lot because it would require user interaction.
