This is more or less identical to pinning, except you are simply doing it manually, except telling APT. Until then, I suggest you check out the stuff I wrote about pbuilder in the current book, or investigate pbuilder, or -- if you are not afraid of a more complex and more powerful approach, investigate schroot+sbuild in combination with LVM snapshots.
