With RAID 5, you don't have to add in pairs: just add a drive when you want
to. If one drive fails, *all* your data is still safe :)

The disadvantage is that you may not be able to utilise the entire capacity
of each drive (unless they're all of equal size), but hey, nothing's
perfect!
