The "new way" to configure resolution, multiple heads, etc. is via RandR: http://wiki.debian.org/XStrikeForce/HowToRandR12 There are several graphical tools for configuring RandR in the Debian archives, see "apt-cache search randr". If your driver/hardware combination does not support the RandR extension then you can add the old-fashioned "Modes" lines to your xorg.conf yourself, following Sven's hint on how to get started.
