I'd try this:
  dpkg --purge gnome

That should remove gnome and all of its extra packages.  Then it's just
a matter of apt-get install the packages you need (e.g. apt-get install
epiphany-browser).  As you apt-get install packages, you'll be presented
with a list of dependencies and can abort the install if you don't like
what you see.
