I haven't done it in a couple of years, and then it was only to say I'd done it ;-). Install kernel-package and read /usr/share/doc/kernel-package/README.gz and google on "debian kernel compile" or similar. It's pretty bullet-proof in debian. It's just a matter of determining what you need for your hardware and turning off everything else. Personally, I'd compile a static kernel without an initrd.
