I read somewhere that this was documented behaviour of ps when username
>= 8 characters. My ps function is
ps axo user:12,pid,vsz,rss,cputime,args
which gives 12 chars for the user field.
Read the section in http://wiki.debian.org/PkgExim4UserFAQ which talks
about why the username Debian-exim was chosen. You might want to hold
off changing the UID as it is used by the Debian scripts.
