I would think that would help. You might even need to grab the ffmpeg from Lenny or Sid to get the support you're looking for. I don't have an iPod, so I can't be certain that my suggestion would help, but I do know that Sarge is old, and Etch is now the stable version of Debian and you're much more likely to get support for newer hardware and codecs by upgrading to it.
