One way or another you still have to login to get access ;) but you can also do that remotely. If you REALLY need GUI apps on that machine, then one way is to use ssh X forwarding. On the server edit /etc/ssh/sshd_config: X11Forwarding Yes (I think this is the default) and then from the client machine start ssh with -X and run your GUI app. The app runs on the server, but displays on the client (for archives sake, in X these terms are reversed).
