I guess I was vague because the problem was so simple.  I continued to
google -- looking for the magic keywords, and found a relevant xorg.conf on this page:

from which I exerpted this bit of the "Device" section:

# TV Out Setup
        Option      "TVStandard" "NTSC"
        Option      "TVOutFormat" "SVIDEO"
        Option      "TVOverScan" "0.6"
        Option      "ConnectedMonitor" "TV"

which gave me what I needed.  I had to use the "nvidia" driver.
