I agree that some things require a GUI but IMHO not much of these
require root privileges.

The Oracle installer indeed requires the use of it's GUI.  However:
the installation should not be performed as root!  One of the first
steps in setting up Oracle (Database or Application Server) require
the configuration of the "oracle" user account.  The ORACLE_*
variables are only set correctly for the oracle user.  I usually set
up X forwarding to my workstation and launch the GUI locally so we
don't need to setup X on a server.

As for CrossOver: I fail to see why you would need an Office suite as
root.
