When you click on a link to pdf file and the dialog pops up, you can click on the "Open with" drop down box, and browse to "/usr/bin/evince". Firefox should remember this setting. Also there seem to be pdf related extensions on Mozilla Update [1]. If you want this to apply globally to all users, I really do not know how to do it, but I can give some general tips. You will probably need to find a certain configuration file in "/etc/firefox/" and edit it by hand, as Firefox is not really a GNOME application, so it does not always follow GNOME settings. Uninstalling all other pdf viewers could also do the job, as then there would be nothing to choose from. Hope this helps.
