In terms of look, most modern desktops can be themed/skinned to look
mac-ish. Feel is a little harder. KDE can be set up to have a menubar at
the top of the screen which shows the menus for the active windows, but
that only works for KDE apps. If you want an environment similar to MacOS
X, GNUstep is an implementation of the same underlying libraries, plus
several of the same apps, but it looks and acts like NeXTStep/OpenStep
rather than MacOS X.

I'd probably go with KDE, but it depends on what you are looking for.
