I was trying out imagemagick with the command line above on some photos
I want to put on the web, and it reduced them from 1.xMB to a
web-friendly 100KB or so, but unfortunately most of them are pretty
badly pixellated.
I see the massive number of options available in 'convert' and was
wondering if there was a way to minimize the pixellation.

Have you tried the -quality switch?
-quality <value> JPEG/MIFF/PNG compression level
