Correct me if I'm wrong, but I believe that the other protocols (MSN, IRC) come compiled into gaim. I think that you can enable them by going into Tools>Plugins... I'm not sure, though, as I run Gaim from CVS, which I would recommend. As an added bonus, Gaim comes default with the other protocols enabled. I'm not sure how this runs in testing/stable, but you can get Gaim from CVS by adding this into your sources.list:
