Well, have you looked into the /etc/rc?.d directories ? Assuming runlevel of 5 since you going into x, there should be a startup script for gpm in /etc/rc5.d named something like S88gpm. delete it. Now gpm won't start when entering level 5. It will still be running if you use another runlevel or start it yourself, so you might want make a kill script and place it in /etc/rc5.d.
