The default depth configuration may depend on which version of Xfree86 you are running. Check /var/log/XFree86.0.log
I'm running version 4 (woody)
and in /etc/X11/XF86Config
I have
Section "Screen"
...
DefaultDepth 16
...
End Section
I used XF86Setup to create the file in version 3 (potato)
