Try running:

apt-get install gnumeric/unstable after updating your sources.list file
to be able to see the unstable listings.  Just don't do a dist-upgrade
without making it an apt-get -t testing dist-upgrade from now on.  That
way you'll only get the unstable gnumeric and not the whole enchilida.
