Simply edit /etc/modutils/aliases to have
alias eth0 <module>
where <modules> is the kernel modules for your ethernet card. One of
mine is 'tulip' and another is 'ne'.

apt-get remove <package list>
or
apt-get remove --purge <package list>
if you want to get rid of config files too.
