I finally resolved this by editing the prerm file:
/var/lib/dpkg/info/irda-common.prerm
Changing the following lines:
<# Automatically added by dh_installinit
</etc/init.d/irmanager stop
<# End automatically added section
----
># Automatically added by dh_installinit
># /etc/init.d/irmanager stop
># End automatically added section
... e.g.: commenting out the /etc/init.d/irmanager command.
That unwedged it.
...now to get the damned IR port to actually work....
