Have a look at the spam assassin documentation, it talks about the memory usage of spam assassin. If you spam assassin in your procmail file it willstart a perl interpreter for every message. If several deliveries happen at the same time I can see you running out of memory.

You may want to switch to spamd/spamc, the daemon/client version of spam assassin especially if you are getting lots of mail. THen only one daemon handles the client requests.
