In the Rewrite rules section (near the end of /etc/exim.conf) try
something like

[EMAIL PROTECTED]   [EMAIL PROTECTED]    bcfrF

This will take any mail with an outgoing domain of domain1.com, and map it
to the same user, but at @domain2.com.
