Use the equivs package. Just follow the instructions to create an equivs package that provides the same as exim does. Install (you'll need to foce it, IIRC) the new package you have created, un-install exim, and you should be right. This is what I did myself and it worked well. This is off the top of my head, so you may have to play around a bit, but basically that's what equivs is for.
