Yes it can be done. You'll need to get the version of apt-get that is in ftp.debian.org/debian/dists/stable/main/upgrade-2.0-i386/ and then edit your /etc/apt/sources.list to point to the potato packages. Run apt-get update followed by apt-get dist-upgrade. It's been quite a while since I did this so I don't know if any new problems have cropped up, but that is how I installed Debian on this machine, as I had the Debian 2.0 CD and wanted to be running potato.
