Solved, I think. 'apt-get install openoffice.org/unstable' seems to do the trick!
I then used OOodi to reinstall the UK dictionary, then reconfigured the writing aids and languages in Tools > Options > Language settings. This time they remained after rerunning OOo.
I also had to reinstall ttf fonts using OpenOffice.org Printer Administration (/usr/bin/oopadmin).
