I usually use the geometry package for setting up the pages just the way I want -- dimensions, portrait/landscape, left/right, etc. It's got built-in support for passing \special commands through dvips with the "dvips" option. Then, if needed, I'll use dvidvi or pstops to rearrange the pages into multiple-up sets.
