That will change the password in the current /etc/passwd, which is in the RAM disk; it will disappear as soon as you turn the machine off. Boot from the rescue disk or CD. Mount your normal root partition. edit /target/etc/passwd and clear the password field of the root line. Shutdown and reboot. Login as root (no password required, now). Run passwd to set the new password. If you are using shadow passwords, the password field just contains an x.
