Well, if you wanted to export part of your drive (say /usr) to another machine so that machine didn't have to have all that stuff installed locally, it's tough. Also, some people like to mount directories such as /usr, (soon /etc), read-only so that they can't get accidentally fuggled with by doing screwy things as root, etc. I do it because if something goes wrong, I can fsck one part of the tree (one partition) much faster than I can fsck the whole darn thing.
