You probably want to use the pbuilder package, and set it up to build from a chroot environment for stable. (Where you're probably losing, incidentally, is that when the package tries to find its dependencies, it finds the system libc6, and looks in the system dpkg information to determine that this means that the package depends on the unstable version of libc6.
