I am about to colocate a debian server and now I don't know if I should install woody or sarge.
I'll be colocating it in 1-3 weeks. I am thinking that I should probably use sarge.
Any advice?

I've been running sarge on my servers for months now, mostly due to the availability of newer packages.

According to the post stating that sarge is frozen, the security team
will officially support sarge together with woody, so security updates
should not be a concern.

I'd say just go with sarge.
