What do I need to configure? What HOWTO/man page should I read? As root try: dpkg-reconfigure exim (or exim4 if that's what you have installed).
It should ask you some questions about your set up which will probably be "smarthost" to send mail and collecting mail from a pop3 account. You can then configure your outgoing mail server details within exim.
