The place to do this is in /etc/email-addresses if your exim.conf has
the correct sections generated by eximconfig.
Look to find a rewrite rule in exim.conf along the lines of
*@escortsmumbai.com ${lookup{$1}lsearch{/etc/email-addresses}\
{$value}fail} frFs
and then edit the email-adresses file to do the conversions you want.
