This is the Debian "alternatives" system. Since there are often many different programs that will perform the same basic task, Debian provides a configurable system for choosing a machine wide default for each. Have a look at the man page for "update-alternatives". Try for example: update-alternatives --config x-terminal-emulator This will give you a menu of all the editors on your system and let you change/chose the default one.
