Eso sí, ahora no me preguntéis porque no me acuerdo dónde la cambié.
El caso es que hice tantas pruebas y supongo que funcionó cuando se
reinició la máquina (por tanto el apt-proxy)

apt-get dist-upgrade
apt-proxy-import -vi /var/cache/apt/archives
Y luego voy al cliente, y otra vez:

hago "apt-get update" y me coge bien las fuentes, pero con el "apt-get
dist-upgrade" se me va a descargar los paquetes a los servidores
originales en lugar de cogerlos de mi servidor apt-proxy.
