yes, as far as sbuild is concerned, we just want to avoid general regressions of its ability to cross-build (as happened in the past because of mistakes of mine). So testing just one architecture is completely fine with me and makes the check meaningful. I'd just choose crossing from amd64 (build) to arm64 (host).
