This looks a lot like KDE bug #67727 (http://bugs.kde.org/show_bug.cgi?id=67727). You might want to read that report, since it contains possible workarounds involving setting locales (I myself can't reproduce it). The basic problem is that your friends' clients aren't sending encoding information, so Kopete is guessing, and doing so badly, for reasons themselves deeply rooted in the QT toolkit.
