one reason is perhaps that on Macs GRUB is yet little used or tested? If
it works like on PC, including menus, parameter editing, rescue mode, it
would be an improvement actually.
I don't think yaboot, while it served us for many years, has special
features... at most we must be very sure that all yaboot supported
computers will be supported by GRUB and that nobody is left behind.
The same goes perhaps for "old" RS/6000 machines.
For now, my experience was that it was already quite hard to install a
working yaboot on my iBook to "get it booting" after an install.
