On second thought, mounting /boot/grub might not even be required when using the grub-install command. It could be that the grub-installer script from d-i sets this requirement because the original mechanism that was planned to be used was using grub-mkimage and then copy the result manually. Either way, please try to perform some trial-and-error testing and let me know whether you can find a working mechanism for the steps above. Adrian -- .''`.
