I don't think that any PowerPC Macintosh is able to boot ppc64el port. I think old Mac users are relying mostly on powerpc port. I also understand that powerpc installation starts a desktop window manager as soon as it installs. Anyway, regarding ppc64el, I understand that the default desktop installation would be more useful if you have a Talos workstation[1], or maybe a powerpc laptop[2].
