I believe this is a nubus machine which won't work with BootX; the good news is that there is a way to install Debian using the MkLinux booter. I put up some notes on installing woody on to a nubus mac sometime ago: http://www.clivemenzies.co.uk/selfhelp/nubusmac.html It should be adaptable to sarge. I fear some of the links are now broken and I haven't had time to trawl the web to find later sources. If you get really stuck I may have copies of some of the essential files knocking around on our servers; let me know and I can mail them off-list. I've still got the 8100/80 with woody on but don't use it and would like to find it a good home. I did vaguely think of reinstalling it with sarge and update my notes but I've got too many other 'projects' on my list .....
