Apple has effectively always had a sound server in their OS. Back in the old days, it was called the Sound Manager. I forget exactly what it's called now, but I know there is a software mixer built in. The Linux sound drivers have historically supported only one stream, which is why people started writing stuff like esd and arts. If you go back far enough into the history of the Macintosh, you will get back to the old Sound Driver for the PWM sound system, which had limitations even worse than the Linux sound drivers.
