I think one problem that people commonly run into is that the default ext2 options field for / reads: defaults,errors=remount-ro or something like that. But XFS doesn't understand errors=remount-ro, and barfs (and ironically mounts the FS read-only). The solution is to just use "defaults" for the XFS options field.
