Actually, Debian's kernel-{source,headers} packages both update /usr/src/linux to point at the correct directory and the documentation available indicates that /usr/src/linux is a symlink which can be pointed at whatever you need it to point at. Specification of a full path is something kernel-package does when you use it with an installed modulename-source package.
