For me blender always crashes when extruding in Edit mode. The file /tmp/blender.crash.txt contains "/usr/lib/x86_64-linux-gnu/libpython3.9.so.1.0(PyEval_ReleaseLock+0x15) [0x7fea4e9b2645]" Upstream issues T81688 [1] and T81728 [2] indicate that blender doesn't support being linked to Python 3.9. Which Blender in Debian seems to be. So it seems the issue might be fixed by depending on another (older) Python version.
