I got kind of overwhelmed by two things:

1. How to manage the non-GCC-version-specific packages that are,
nevertheless, built as part of one of the gcc-X.Y-doc[-non-dfsg]
packages.

2. How to make the packages built from gcc-doc-defaults track the
gcc-defaults packages; that is, how to make them pull in the right doc
packages on every architecture

If you actually want to take a look, I believe I've pushed all my code
to <https://github.com/SamB/debian-gcc-doc>.
