There's no need to use a symlink. dpkg-source is smart enough to understand a lot of odd-ball tarballs. See, for instance, my package hfsprogs (which Apple calls "diskdev_cmds" or something similar). If you unpack the orig.tar.gz from my package, you can see that dpkg-source even renames the directory that would be created to something that we want.
