debian/copyright is the license for the packaging itself, it's up to you what you put in it (unless it complies with Policy, of course). And said so, you should use the new address. I think this doesn't worth changing upstream code, even if it's only the license text. You should leave the copyright for the upstream code untouched and file a bug in the upstream BTS.
