In other words, it would appear the author doesn't create tags for every release, just major ones. If that's all Debian would be interested in, I can certainly put together a d/watch file but I wonder whether it's preferable to have an option that picks up all releases (albeit a horribly non-standard one)?

You can keep the get-orig-source. Still I would go with downloading from GitHub
but that is your choice.

Actually, you are already claiming in d/copyright that Source is
https://github.com/joan2937/lg.

Ah, I was under the mis-apprehension that was a relatively informal field that simply pointed at a "useful" source location rather than a specific source (the archive location in this case is rather less useful than the git repo, given it's only ever the latest version available).

With that field you claim where to obtain the sources. It is not informal. You do not have to provide a specific file but can also reference the place where you have obvious links listed to obtain it. So it would be either https://github.com/joan2937/lg or http://abyz.me.uk/lg/download.html or http://abyz.me.uk/lg/lg.zip, depending on where your get-orig-source downloads the thing from.
