I've looked into the package list for the gnome flavor. I identified several
"leaf" packages that might be removed together with some of their dependencies,
but only few of them make for significant space, and those are packages that,
while not strictly part of Gnome, one would reasonably expect to be there. Thus
removing openoffice.org still seems to me the only viable option.
Anyway, these are the groups of packages that I found. The numbers are the
sizes of the Debian binary packages. I am not sure how they translate into the
size of the livecd image, but I suppose they be close. This was done manually,
so the list of removable dependencies might not be complete or even correct.

Summary: to free ~55 MB as needed, you either remove openoffice.org (~105 MB),
or gimp, inkscape and gnome-games (~49 MB) plus a few other packages (that may
be pidgin, or gthumb and gnome-themes-extras, or gnome-themes-extras and
gdm-themes...). Again, I'd choose openoffice.org.
I'll add that if you remove openoffice.org, you can include gnome-office as a
replacement. It and its missing dependencies require ~16 MB, while removing
openoffice.org will leave ~50 MB free:
